Custard Buns


Ingredients:
50 grams yeast
5 dl soymilk
125 gram butter
2 dl sugar
1 teaspoon salt
1 teaspoon cardamom
14-16 dl flour

Custard:
3 tablespoons Vanilla cream sauce(Ekströms Marsansås att koka)
4 tablespoons sugar
4 dl soymilk
3 teaspoons vanilla
1 dl liquid butter


Preparation Instructions:
Crumb the yeast into a big bowl.
Melt the butter and add the soymilk(I heat the soymilk a little before in the microwave, if you add the soymilk directly into the melted butter it could clump, and it's not so fun)
I'd recommend you to use an digital meat thermometer, so that you can get an exactly 37 C, that's when you get the best result.
Pour the milk mixture over the yeast and stir till the yeast has dissolved.
Then add the sugar, salt, cardamom and about half the flour and stir, then add some of the flour at the time, star with 1 dl till your up to 13 dl then start adding ½ dl till the dough is smooth, it shouldn't stick to the bowl or to anything, but it should still be a little sticky to the touch, but the dough shouldn't stick to your fingers.
Now you have to let it sit for 40 minutes while it rises.
Now you can do the Custard and Now is a good time to put on the oven 200 C or 392 F.
Just take all the ingredients for the custard and mix it with cold milk, then boil it till it thickens, put it aside to let it cool.
When the dough has doubled in size take it and knead it, split it into twelve pieces, tuck them out and put about a tablespoon of custard in the middle, take the sides and pinch them together, now take the bun and place it with the pinch sides on the bottom on a wax paper.
Now let them rise for 10 more minutes.
Let them bake for about 10 minutes till there golden brown on the surface.

Fruit bread with sourdough


Ingredients:
175 g mixed dried fruit
150 g mixed dried fruit roughly chopped
50 g yeast
3 dl 37C/98F water
1,5 teaspoon salt
4 dl rye flour
6 dl manitoba cream flour
3 dl sourdough
7 dl flour

Preparation Instructions:
Take the 175 g of mixed fruit of your pleasing a put it in water for a few hours, then mix it to a pure.
Crumble the yeast into a bowl.
Add the water and the salt and stir till the yeast has dissolved.
Add 2 dl of Manitoba cream and 2 dl of rye flour, stir.
Now add the fruit pure, sourdough and roughly chopped mixed fruit, and stir.
Now add the rest of the Manitoba cream, wich is 4 dl.
Now add 2 dl of rye flour, mix throughly.
Now start adding the rest of the flour 1 dl at a time and work the flour in throughly before you add another dl. The dough is still very sticky, but we'll leave it like that and add a little more flour when we're kneading the dough.
Now leave it to rise for 40 min.
Tip the dough over on to a wax paper that you've dusted a layer of flour on and split the dough into two and start to knead on of the halves of the dough.
When it's smooth, spilt the dough into three pieces, roll them and braid them into a bread, do the same with the other half.
Now let them rise for 40 min.
Heat the oven to 175 C or 347 F. Bake the bread for 35-45 min.

Heavenly chocolate cake



Ingredients:
100 g butter
150 g dark chocolate (I used Eldorados Dark chocolate for baking, mainly because it doesn't taste like dark chocolate at all with only 20% cocoa)
0,75 dl sugar
0,5 dl cocoa
0,5 dl O'boy dark powder
2 teaspoons of vanilla
2 teaspoons of baking powder
0,5 ml real vanilla powder
3,5 dl flour
1 dl soy milk
1 dl oat cream
1 tablespoon chocolate sauce
50 g chopped dark chocolate(preferably another chocolate than the one you already used. I used Fazer dark chocolate for baking, it contains 44% cocoa)

Preparation Instructions:
Preheat the oven to 175 C or 347 F. Line a baking pan with butter and coconut flakes or breadcrumbs.
Melt the butter and the chocolate together.
Add all the dry ingredients in a bowl and mix.
Add the chocolate sauce, soy milk and the oat cream into the now melted butter and chocolate, add this to the dry ingredients and mix.
Now add the chopped chocolate and mix for just a few seconds.
Then just get it all into the baking pan and pop it in the oven for 20 minutes.
Done!

Cake party! And some other stuff..

Prinsesstårta!


I had some friends over.
They had prinsesstårta(princescake), chocolate squares, cinamon buns and snickers to choose from!
It was really nice!
I really should have cake parties more often!

And now some stuff I've done during the last week:

Pizza with tons of cheese!

And really really creamy delicious paste! Yummy!

Snickers

Ingredients:
1 dl sugar
2 dl syrup
340-350 g smooth peanut butter
1 teaspoon vanilla
1 liter crushed cornflakes
250 g dark chocolate

Preparation Instructions:
Add the peanut butter, sugar and syrup into a pot boil it till the sugar has melted, watch so it doesn't burn.
Add the vanilla and cornflakes and mix.
Spread the mixture on a wax paper, let it cool.
While it cools melt the chocolate, then spread the chocolate over the mixture.
If you want you can sprinkle some whole peanuts on top.
Done! Enjoy!

Chocolate Squares / Kärleksmums


Ingredients:

250 g of room temperated butter
3,5 dl sugar
5 dl flour
1,5 dl soyflour, I add it so that the finished thing doesn't crumple so much
2,5 dl soymilk
2 dl oat cream
5 teaspoon vanilla
5 teaspoon baking powder
3 tablespoons Cocoa
70 grams of melted dark chocolate


Preparation Instructions:
Preheat the oven to 175 C or 347 F. Line a big baking pan with butter and breadcrumbs.
Add the butter with the sugar and mix.
Then add the flour, mix.
Add the soy milk and the oat cream, mix.
Then add everything else and mix
Then just get it all into the baking pan and pop it in the oven for 40 minutes.
Take the cake out and let it cool completely.
Now do the frosting.

Chocolate Mocca Frosting
Ingredients:
200 g  melted butter
10 dl powdered sugar
6 teaspoon vanilla
75 g of melted chocolate
4 tablespoons of cocoa
1-2 teaspoons coffee
Organic coconut to sprinkle on top

Preparation Instructions:
Melt the butter with the chocolate add coffee, vanilla, cocoa and mix.
Take it off the stove and add the powdered sugar and mix. Pour it over the cake in a thick layer and sprinkle the coconut over it.
Leave it to settle, then cut the cake into squares and enjoy!

Hi there!






I haven't been active at all for a very long time, it's only because my life spells chaos.
Anyway, so I have moved around a little but now I have my own apartment with all my stuff!
So I hope I'm going to get started, going to get active.
Right now I'm in the middle of a Chocolate squares recipe, it's in the oven, so later tonight you'll get the first new recipe in months!
I'll hope the passion for baking will start to come back to me now, when I can build up my life again.

I'm actually hosting a cake party in a couple of weeks, then I guess four new recipes will get posted! And I found a wierd bread recipe I really want to try, so I'll guess that end up here to soon.
